The 61-year-old describes himself as a Christian, libertarian environmental activist and farmer, as a capitalist, sometimes even as "insane". He fights tirelessly against a growing agrarian bureaucracy that favors large industrial enterprises. He advocates a free, unregulated and non-subsidized, decentralized agriculture that allows small farms to prove their merits and thus be important pillars of rural communities. With this decisive attitude, he naturally also divides: his admirers see in him the high priest of the pasture, the most famous farmer in America and the most versatile thinker in Virginia since US founding father Thomas Jefferson.
His opponents, on the other hand, despise him as a charlatan and bio-terrorist. Joel Salatin is a charismatic, very humorous and widely educated teacher. An advocate of sustainable, nature- and animal-friendly agriculture, he now holds seminars all over the world after handing over the management of his Polyface Farm to his eldest son Daniel. He speaks to farmers, students, politicians, managers and entrepreneurs. Over the past 20 years, he has written 12 books, one of which has made the New York Times bestseller list.

Polyface - The Farm with Many Faces
Joel Salatin's parents had managed an organic farm in Venezuela until 1961 and had to return to the USA after a coup d'état. This work was now to be continued at home. The parents bought a farm in the Shenandoah Valley in Virginia - a run-down estate with eroded soils. Joel Salatin's father was convinced that "we can heal it" and laid the foundations for regenerative agriculture. Today this farm is called Polyface Farm - the farm with many faces.
Wide Field - Agriculture on the Move
After his studies and marriage, Joel Salatin concentrated entirely on the farm, which he took over from his parents. Thousands of people who are interested in sustainable and at the same time profitable agriculture now visit the Salatin family farm every year - open door 24 hours a day, 365 days a year. In weekly guided tours, those interested experience and learn the basics of Grass Farming from Joel Salatin, a sophisticated pasture management designed by him that intelligently simulates nature and thus enables a highly productive and symbiotic polyculture.
Grass farming and pasture management
Salatin is called Grass farmer and speaks of Mob Grazing. This means that the animals rotate daily to a new pasture area, which makes up only a fraction of the total pasture. As a result, they stand much denser as in the wild, and the droppings are thus concentrated. This rotation simulates natural processes in nature in which the animals themselves "help" to promote sustainable fertilization and eradicate pests (e.g. during symbiotic grazing between laying hens and cattle - the chickens look for and eat the maggots in the cow patties and scatter them in the process). The aim is the maximum use of the grass for feeding (a grass area is grassed or hayed 4-5 times in the season) and consequently a high, animal-friendly meat production.
Animal breeding is not carried out in fixed stables, but by means of sophisticated pasture management in combination with mobile electric fences, mobile laying hen and broiler stables. This makes it possible to permanently assign a fresh piece of grass to the animals. Beef cattle, pigs, laying hens, broilers, turkeys and rabbits live outside except for a few winter months. The cattle are fed exclusively on grass and hay. The broilers and pigs are fed a mixture of GMO free cereals in addition to grass. Fertilization is carried out exclusively through natural compost, and pesticides are not used. Antibiotics and medicines are only used in serious cases of animal illness. The focus is on the targeted breeding of resistant animals. Salatin produces 350,000 eggs, 12,000 broilers, 50 beef cattle, 800 turkeys, 500 rabbits on 40 hectares of grass and 250 pigs in the forest.
Ecological forest management
Of the 200 ha total area of the farm there are about 40 ha pasture and about 160 ha forest. The forest serves as a biotope, a retreat for birds and animals as well as a water reservoir with several artificial ponds. But it is also an excellent grazing ground for the pigs. In pig breeding, Salatin also uses the methods of mob grazing, in contrast to pasture breeding, on a weekly basis. In addition, the forest is a wood supplier, since the wood is the raw material for composting and the building material for various fixed and mobile buildings on the Polyface Farm. Salatin has his own small sawmill for this purpose, in which he processes the wood himself.
The New Roots of Progress
At the centre of the idea of Organic Polyculture is Salatin's philosophy, which is characterized by the following principles: Model Nature - systematic simulation of nature's sustainable processes, which Joel copied from animals in the prairie. Symbiosis - the interaction of animal, pasture and nature, which complement each other in a wonderful way, relieving humans of work. Soil - the promotion of soil vitality by means of earthworm management, Salatin calls it “Earthworm Enhancement Business”, has top priority in Organic Polyculture. Efficiency - a very minimalistic, highly capital efficient and mobile use of resources, characterized by high functionality and enabling profits. Local Direct - Polyface sells its products only regionally and generates the entire added value through direct sales.
At the cutting edge of time - Capital-efficient and profitable
In addition to the main farm of 160 ha of forest and 40 ha of pastures, Salatin has meanwhile leased other farms in the neighborhood. He leaves these to his best former apprentices in a lease model and thus enables them to take their first step into self-employment. Polyface now generates more than 2.5 million dollars per year together with the leased additional businesses and employs 20 people. In addition to his enthusiasm for sustainable agriculture, Salatin is a keen entrepreneur and has been operating his business profitably for many years. He knows costs and returns in detail and in every area of his farm. Salatin's approach requires little capital and few machines. And since he sells his products himself, he generates all the added value.
Sustainable soil culture - Root growth for more humus
The soils of the Polyface Farm - which were completely exhausted and eroded when Salatin's parents founded it in 1961 - are today by far the most fertile soils in the region, with a high proportion of earthworms. These facts have been proven by long-term experiments carried out by the well-known Smithsonian Institute in Washington DC. The intensive stimulation of grass growth through pasture management leads to the strengthening of root growth, thus more carbon binding in the soil, more earthworms and continued formation of humus. Since its inception, Joel Salatin's methods have increased humus levels to 8%. This level corresponds to the best prairie soils in the Midwest of the USA.
Healthy Food - Direct sales in the region
With his methods Salatin produces food of the highest quality. Studies have shown that Polyface meat exceeds the nutritional value of conventionally produced meat and that eggs achieve significantly higher omega-3 levels. Polyface's healthy foods are sold directly in the region, especially to 4000 families in the US capital Washington DC, 270 km away, to restaurants and through the farm shop. Customers can order through the website, and there are 30 privately organized pickup stations. Poultry slaughters Salatin itself, cattle and pigs are slaughtered in a local slaughterhouse in which Salatin is a shareholder.

Joel Salatin for the first time in Germany - for a two-day Seminar
On his first visit to Germany, US farmer Joel Salatin inspired the approximately 100 participants of the two-day Masterclass Seminar with his messages and methods for better soils. Joel Salatin sowed new impulses for the sustainable management of forests, pastures and meadows, arable land and farms. During the breaks, committed discussions developed about the future of land, about the health of and threats to soils, animals and humans. Further topics: responsible soil and pasture management, regulations for the implementation of innovations, added value, efficiency and profitability of Regenerative Agriculture.

For the second time in Germany: Workshop with Ernst Götsch
A day with Ernst Götsch at Schlossgut Alt Madlitz. Here, in cooperation with the farmer Benedikt Bösel, he implements a project based on the principles of Syntropic Agriculture.
At the beginning of November, around 80 participants gathered at Schlossgut Alt Madlitz to spend a day together with Ernst Götsch and to become acquainted with his methods of Syntropic Agriculture. Participant Ulrike Müller wrote: "The opportunity for exchange and networking with like-minded people at the event was very valuable, appreciative and encouraging".
There was also a demonstration of the new machine developed by Ernst Götsch and constructed in cooperation with RhenusTEK - "Peace Farming Technology", as Ernst Götsch calls it.
